It's a chemistry trick run by bacteria. They feast on lactose — milk's sugar — and pump out lactic acid. Milk is full of tiny protein clusters called casein that normally float apart, because they carry the same electric charge and repel like magnets. The acid cancels that charge. Suddenly the proteins stop repelling and clump together, linking into a vast three-dimensional mesh that traps the liquid in place. That trapped liquid is why it feels solid.
So yogurt isn't milk with something added — it's milk with its charge removed. The spoon stands up in a net of proteins the acid forced together. You're eating structured, acidified milk.
