Fermenting food means deliberately filling it with living microbes. That sounds like exactly how food goes bad. So why does fermentation preserve food instead of destroying it?
It's a race, and fermentation rigs it. The microbes we want — like lactic acid bacteria — get a head start and multiply fast. As they eat the sugars, they flood the food with lactic acid and sometimes alcohol, making it harshly acidic. The spoilage microbes and pathogens that would rot the food can't survive that acid, so they never get a foothold. The good microbes claim the food before the bad ones can.
So fermentation is controlled decay that blocks uncontrolled decay. You're not stopping microbes from eating your food — you're picking which ones win, and letting their waste guard the rest.
