You've boiled pasta a hundred times. But what is actually happening inside that noodle the moment it hits hot water?
Pasta is mostly starch — tightly packed granules locked inside a protein grid. In their raw state, those granules are dense, ordered crystals. Water can't get in. That's why raw pasta is rock hard. But the moment you drop pasta into boiling water, two things happen simultaneously. First, heat weakens the protein network holding everything together. Second, water molecules force their way into the starch granules. The granules absorb water and swell — up to ten times their original size. Their tight crystalline structure collapses into a soft, flexible gel. Scientists call this gelatinization. The whole strand transforms from the inside out, granule by granule, which is exactly why pasta has a window of perfect doneness — al dente — before it keeps swelling and turns to mush.
Here's the part that breaks people's brains: pasta actually keeps cooking after you drain it. The residual heat inside the strand continues gelatinizing starch granules for another 60 to 90 seconds. Every chef who tells you to pull it a minute early? They're not being precious — they're accounting for the physics.
